My Favorite Make-Ahead Breakfast Recipes


Hi Reader,

Mornings are often busy and hectic, especially if your child starts school at 7 am or you have to beat the morning rush and head into the office before sunrise.

To make my mornings a bit less chaotic, I love turning to make-ahead breakfast recipes you can enjoy quickly (or easily pack for the road).

My Favorite Make-Ahead Breakfast Recipes

Freezer-Friendly Egg McMuffins: Skip the drive-thru and make a better-tasting, better-for-you Egg McMuffin. I have a hack for making eggs in bulk that makes this recipe super simple to prep. Money-Saving Tip: Use deli ham or skip the meat altogether instead of Canadian bacon.

Overnight Oats: This is my go-to weekday breakfast and the one I have made more than any other breakfast recipe. They take minutes to prep, can be flavored in endless ways, and can be customized to fit any dietary restrictions. My favorite is PB Banana.❤️🍌

Baked Oatmeal Cups: Studded with peanut butter and jelly, these baked oatmeal muffins are a cross between oatmeal and a muffin and can be enjoyed warm or cold. These were always a hit with my kids!

Crockpot Oatmeal: Studded with maple syrup and brown sugar, the oatmeal literally cooks while you sleep. You may just even be able to hit snooze on your alarm -- at least once 😉😂

Baked Oatmeal: I like to make a batch of Baked Banana Oatmeal, Baked Sweet Potato Oatmeal, or Baked Pumpkin Oatmeal on the weekend when I am already making dinner Sunday night. Then during the week, we reheat slices and breakfast is done. My husband especially loves the pumpkin version.

Whole Wheat Waffles: You won't catch me making waffles on a Tuesday morning at 6 am, but you will find me pulling them out of my freezer to toast. Funny story: Tate wrote/drew a journal entry in his kindergarten journal about his love for waffle "sandwiches" for breakfast. It was simply a toasted waffle with PB & J.

Breakfast Burritos: I sent my son off to college with these last year, and every time I visited, he asked for more. They reheat beautifully, are insanely flavorful, and kept him full for HOURS! Last time I made them, I simply made my Hashbrown Breakfast Casserole, then added slices to burritos. Same potatoes, eggs, and sausage vibe, with a whole lot less prep. I wish I thought of it sooner 😉

Banana Breakfast Cookies: Made with oats, bananas, and dates, these cookies are 100% breakfast-friendly. And if your kids are like mine, announcing cookies are on the menu for breakfast is a sure-fire way to win "mom of the year" -- or at least "mom of the next 5 minutes!"😂

Baked Cottage Cheese Eggs: This has been a new favorite for me. Creamy, cheesy, and high-protein. But what keeps me coming back to this recipe is how easy it is to make.

Instant Pot Steel-Cut Oats: This is fast enough to make any day of the week, but I like making a big batch, then portioning the oats into heat-safe containers and storing them in the fridge for up to 4 days. Add a splash of milk, reheat for 1-2 minutes in the microwave, and then enjoy right from the container.

Homemade Granola: This is another recipe I like baking while making dinner on Saturday or Sunday. It is as easy as mixing a few staples, popping it in the oven, and letting it bake low and slow. It is an obvious favorite over Greek yogurt, but lately, I have been loving it sprinkled on sliced apples topped with peanut butter.
