On My Menu This Week to Keep Things Easy


Hi Reader,

Now that school is back in session, a sense of routine has returned. And with that comes a jam-packed schedule and the need for simple, satisfying meals.

And while I have tons of ideas for school lunches, prep-ahead breakfasts, nourishing snacks, and 30-minute dinner recipes, sometimes all of those options can lead to decision fatigue (at least for me!)

So I thought I would give you a starting point and share 5 things I am personally making this week.

5 Easy Recipes to Make This Week

  • For My Brown Bananas: The heat and humidity are still in full force here, and that means my bananas turn brown FAST. I am using them this week to make baked oatmeal that is perfect for school mornings.
  • My Daughter's Current Favorite Snack Bar: I love that these are made in one bowl with whole grains and Greek yogurt. She loves the chocolate chips🤪Perfect after-school snack.
  • To Stock The Freezer: I made a huge batch of these burritos for our freezer and Tate's. They are perfect for school lunches or late-night college fuel.
  • For MY Lunch: I love it as is OR stuffed into pita bread for a more filling option.
  • The Dinner My Husband Can't Stop Asking Me to Make: With melty cheese, juicy chicken, and bold Tex-Mex flavors, it is a winner with the whole family!

And because my sweet puppy had a rather rough few days (an unexpected trip to the vet and her favorite human leaving for college), she needed a little treat as well -- and these 4-ingredient dog cookies help us put those brown bananas to use without much effort on my part.
