No Eggs? No Problem! Egg-Free Recipes for Less

Hi Reader,

With egg prices continuing to soar ($10 a dozen here!!), you may be looking to cut back on what typically was an affordable, protein-rich staple.

And I am here to help!

While I have quite a collection of egg-free recipes designed for ANYONE avoiding eggs for ANY reason, today I want to share with you a few ways to enjoy some favorites--minus the addition of eggs. Think pancakes, muffins, quick breads, breaded items, etc.

How to Replace Eggs in Recipes

  • Use a Flax Egg. In muffin and quick bread recipes, using a flax egg in place of a regular egg often works well. Simply mix 1 tablespoon ground flaxseed with 3 tablespoons water, let sit for 5 minutes, then use in place of the egg. This works great in ANY of my muffin recipes, such as Carrot Cake Muffins, Oatmeal Chocolate Chip Muffins, and Peanut Butter Banana Muffins.
  • Egg-Free Breading: For recipes like Chicken Tenders and Fish Sticks, skip the egg wash and use milk, aquafaba (liquid from canned chickpeas), mustard, sour cream, or plain Greek yogurt.
  • For an Egg Wash: For recipes calling for an egg wash before baking (think Cheese Danish or Cherry Pie) use cream, milk, or a bit of melted butter.
  • Egg-Free Meatloaf/Meatballs: For recipes like Pizza Meatloaf and Baked Meatballs, replace the egg with aquafaba (liquid from canned chickpeas) or a flax egg (see above).

Our Favorite Egg-Free Recipes

  • Egg-Free Pancakes: I developed this recipe for my son who had an egg intolerance for years. They are light, fluffy, tender and can be made with or without dairy as well. Feeling more like waffles? My whole wheat waffle recipe includes an egg-free modification.
  • Homemade Rolls: A lot of rolls have added eggs for richness--this recipe does not! And the rolls are fluffy, soft, and super easy to make.
  • No-Churn Ice Cream: No ice cream machine OR eggs needed to make rich and creamy ice cream.
  • Egg-Free Cookies: Shortbread and snowball cookies are two of my all-time favorite cookies and both are egg-free.
  • Make a Crisp: Apple Crisp, Peach Crisp, and Blackberry Crisp are all naturally egg-free (and perfect paired with no-churn egg-free ice cream!)
  • Have Your Cake and Eat it Too! I recently made my Banana Cake with 1/4 cup added mashed banana and 1/4 cup plain Greek yogurt in place of the two eggs. It wasn't perfectly fluffy, but it was perfectly delicious--and my family didn't notice😉

I hope these recipes/tips helps ease the burden of the rising cost of eggs!

Happy Cooking!

Kristen
