My Daughter's Current Favorite Recipes


Hi Reader,

If you have been a fan of A Mind Full Mom for awhile, you have been a part of watching my kids grow into young adults. You have watched me pack school lunches, navigate food allergies, and work with the pickiest of picky eaters.

One of those very picky eaters turns 17 this week--can you believe it!?! Where has time gone?!

In honor of Layla's birthday, I thought it would be a great time to highlight some of her favorite recipes.

Layla's Favorite Recipes

  • Her ALL-TIME Favorite Recipe: While she loves them with sausage gravy for a true southern classic, my southern belle would be happy with a smear of jam or butter.
  • Second Place: You would think this healthy treat is dessert the way she lights up when I make it!
  • Her Favorite Fall Recipe: She begs me to make these muffins year round (and I have no problem with that as they are truly AMAZING and one of my favorites too!!!)
  • Favorite School Breakfast Recipe: I love turning to oatmeal for school mornings and this is Layla's favorite way to eat "oatmeal" 🥞🤪
  • Her Shocking Favorite School Lunch Recipe: She used to request English Muffin pizzas on the regular, but now she is opting for variety (and gasp--veggies!!!)
  • Favorite After-School Healthy Snack: Her long time favorite. She makes these for herself at least once a month. Sometimes she even shares with me.😂
  • Her NEW Favorite Dinner Recipe: Tacos + Pasta = LOVE! Two of Layla's favorites in one simple dish. (But stay tuned...I have a new sheet pan recipe coming soon that she said was a VERY close second!)
  • Her Favorite Comfort Food: "It just tastes like home." It also is a LONG-TIME fan favorite.
  • Layla's Famous Cookies: While this is MY recipe, she helped me test and retest until these cookies were perfect. And now her brother (and his college roommates) ask her to make them a few dozen EVERY time we visit or send Tate back to school. Her friends beg her to make them on the regular too!
  • The Recipe Layla is "Famous" For: See below for the joy that was captured on her face when she joined me in the kitchen to film this video. It was adorable. And while she still adores this mac and cheese, Instant Pot Fettuccine is her current creamy pasta obsession.

Hi Reader, Sometimes the thought of making dinner makes me want to cry. In fact, I was there last night. It had been a long day, I just wanted to forgo dinner.
