Perfect Instant Pot Chicken

The number one thing I get asked is how to cook chicken in the Instant Pot so that it is not dried out, tough, or rubbery.

This is something I have mastered and YOU can too!

Tips for Perfect Instant Pot Chicken

  • Flavor is Key! Whether using a flavorful cooking liquid or adding a seasoned rub to the chicken, chicken needs seasoned. Chicken is incredibly bland on its own--just think about poached chicken. A flavorful liquid, like juice, stock, beef, or wine really are great liquids to use for cooking chicken. And adding spices or herbs also is key to adding incredible flavor to the chicken.
  • Do Not OVERCOOK! Chicken cooks incredibly fast in the Instant Pot, especially boneless, skinless chicken breasts or thighs. It may seem crazy at first that you cook 6-ounce chicken breasts in 6 minutes or a 3-pound chicken in 18 minutes, but you will quickly see that the instant pot can cook the chicken MUCH faster than other methods. Remember chicken is fully cooked when it reaches 165 degrees F.
  • Do not do a quick pressure release--EVER!!! Doing a quick release of pressure as soon as cook time has elapsed is a way to guarantee tough chicken. Immediately releasing pressure causes the meat to seize up, get a weird texture, and dry out--NOT good! Instead, be sure to let the pressure release naturally for at least 10 minutes before releasing the pressure.
